You can only choose class skills at character creation. However, when you get more points each level, those can be spent on whatever is appropriate. However, those should be skills that there is a good story reason for you to learn. If you are using a lot of Survival skills, for example, you would have good cause to raise that. You should only raise a skill one rank per level, unless there is a good story based reason to raise it higher. Skills can’t exceed the maximum ranks for your level. See table 1. Each rank gives you +1 to the skill roll.
To better reflect a diverse amount of characters, some skills will have specialties. These are specific sub sections of skills that your character is good at. For example: History(Military) or Animal Handling(Large Cats). It costs you one skill point for a specialty, but you can make those rolls with advantage. All skills granted by backgrounds will be specialties. If you get deception and Intimidate, for example, you might choose Deception(Disguise) and Arcana(Highborn Technology). You may not exceed your total ability modifier in specialties for skills that default to that ability. If you have +1 in dexterity and +3 in intelligence you could have a total of 1 dexterity based specialty and 3 intelligence based specialties.
If you have no ranks in a skill you will make the check with disadvantage.
